Lazy Morning Hash

Fried eggs over crispy hash browns with sausage links. The weekend breakfast that requires zero thought.

Ingredients

  • 2 large eggs
  • 4 breakfast sausage links
  • 1 cup frozen shredded hash browns
  • Butter for the pan
  • Salt, pepper, dried parsley
  • Hot sauce (optional, but recommended)

Instructions

  1. Crisp the hash browns. Melt butter in a skillet over medium-high. Spread hash browns in an even layer and let them cook undisturbed for 4-5 minutes until golden underneath. Flip and crisp the other side.

  2. Cook the sausage. While hash browns crisp, cook sausage links in a separate pan (or make room) until browned on all sides, about 5-6 minutes.

  3. Fry the eggs. In the sausage pan with the rendered fat, crack in the eggs. Cook until whites are set but yolks are still runny.

  4. Assemble. Hash browns in a bowl, eggs on top, sausage alongside. Hit it with salt, pepper, dried parsley, and hot sauce.

Notes

This is a no-recipe recipe. The key is patience with the hash browns — let them get actually crispy before you flip. Using the sausage fat for the eggs is non-negotiable.
